Today’s Recipe : Steamed Bread Pudding

The easiest way to use my leftover white bread (right pic) is this recipe. It’s easy, tasty, not too sweet and perfect for dessert. In my country Indonesia, we don’t usually eat breakfast with something sweet. So, before I eat something like this, I had to go eat something savory first 😁. Usually, we eat rice with something either protein or fat. Then, go grab some dessert. I don’t eat something sweet in a large portion for just one sitting, so I could eat it twice for just one cup. Okay, that’s not an important information though. But, the important point is the mixture of bread, milk, coconut milk and vanilla are great. Okay, maybe I exaggerating but I think you should make it. This it the perfect dessert if you are too lazy to make a dessert.

Here’s the recipe that I’ve got from my sister, but I modified a little bit.

INGREDIENTS :

8 slices of white bread
1 pcs egg (medium size)
5 tbsp cornstarch
6 tablespoons granulated sugar (can be reduced if you don’t want it too sweet)
350 ml coconut milk
200 ml milk
1 tsp vanilla essence
2 tbsp butter (melted)
pinch of salt

Toppings (optional):
Chocolate chips
Chocolate powder

HOW TO MAKE :
1. Mix all ingredients except white bread
2. Prepare a ramekin or other cup, shred or cut white bread then pour in the ingredients that have been mixed previously. Adjust to your taste, how many spoons per cup.
3. Top with chocolate chips and chocolate powder.
4. Steam for about 20 minutes until cooked.
5. Remove the bread pudding from the steamer, cool it in room temperature. It can be served while still warm or cold after put it in the fridge.

NOTES:
1. Vanilla essence can be replaced with vanilla paste or vanilla powder
2. The cup is preferably made of glass or aluminum, it’s safer to use in a steamer
3. The amount of sugar and salt can be adjusted according to your taste
4. Toppings is optional

Today’s Recipe : Banana Choco Muffin

This choco banana muffin (left pic) is very simple dessert I can make with just few steps. I think I love muffin more than I ever realize. Because, I often made this when I had some ripe bananas. I’m not an expert baker at all, but making this muffin feels like I’m not amateur 😂. I think everyone could make it since this is the easiest dessert you can make (maybe). It has a moist texture that makes you wants to eat one more. Not too sweet, or less sweet than general muffin. The sweetness mostly coming from sugar (obviously), but if you don’t want to reduce the sugar I think it’s okay. You can make the muffin according to your taste.

Here’s the recipe that I’ve got from one of my cook book in the kitchen. I modified some steps, but I’ll write the original recipe too.

INGREDIENTS :

*Ingredients A*

4 pcs ripe bananas
1 large egg
110 grams of granulated sugar
85 grams of cooking oil
1 tsp vanilla essence

*Ingredients B*

150 grams of low protein wheat flour
30 grams of cocoa powder
3/4 tsp double acting baking powder
1/2 tsp baking soda
1 tsp vanilla essence

*Toppings*

Chocolate chips

HOW TO COOK :

1. Stir all Ingredients A with a whisk until mixed. Set aside.
2. In another bowl, mix all Ingredients B as well. Make a circle in the middle. Pour in the mixture from Ingredient A while stirring with a whisk, just a while until it mixed well. Just leave it alone if there are still lumps in the dough. Don’t overmix.
3. Pour the mixture into a cup/muffin pan that has been smeared with margarine. Put topping on top for decoration. Bake in a preheated oven at 180°C on lower heat until cooked (depending on each oven, mine is 20-25 minutes), then at the same temperature on upper heat for just 5 minutes. Leave it at room temperature before served.

Mostly, I didn’t put it in the fridge because I like it moist in room temperature. I often eat it for breakfast or whenever I want some dessert. So, do you like muffin too?Could you show me your best muffin recipe? Please let me know 🙂

Nasi Goreng

What’s your go-to comfort food?

One of my comfort food is nasi goreng. This photo taken from my kitchen few months ago. It is called nasi goreng bistik. Nasi goreng bistik is leftover rice fried with spices such as onion, garlic, shallots and chili. Also I’ve used sweet soy sauce and salt to taste. The taste was a little bit sweet and spicy.

For the condiments, I make crispy chicken fillet, potato chips and boiled some vegetables. I made bistik sauce for topping and it taste like homemade barbeque sauce.

Why nasi goreng is one of my comfort food?maybe because a long time ago when I was a child, my father often cooked nasi goreng for breakfast. Just a simple nasi goreng with omelette.
